400 g fine durum wheat semolina
100 g flour
1 tablespoon Sardinian extra-virgin olive oil
250 ml warm water
1 pinch of salt
500 g potatoes
150 g Pecorino Sardo DOP, grated
2 tablespoons extra-virgin olive oil
A few fresh mint leaves
1 garlic clove (optional)
Salt and pepper

Or a simple drizzle of olive oil and grated Pecorino cheese
Mix the semolina, flour and salt. Add the olive oil and pour in the water gradually until you have a soft dough.
Knead for 10 minutes, then leave to rest under a damp cloth for 30 minutes.
Cook the potatoes in salted water, mashed potato to a purée, then add the Pecorino Sardoolive oil, mint, garlic, salt and pepper. Mix well.
Roll out the pastry thinly, cut out 7 cm diameter circles and place a spoonful of filling in the center.
Close them again, forming the famous ear of wheattypical of Sardinian ravioli. This gesture requires precision, but it gives Culurgiones all their beauty.
Dive in Culurgiones in a large pot of boiling salted water.
When they rise to the surface, cook for a further 2 minutes, then gently drain.
